Finally figured it out. DPP by default applies a lot of chroma and luminance NR to the images. That's why they appear plastic and processed. When I pulled the sliders to zero, up popped sharper, albeit noisy photos. It reminds me of the a7riv that way though I don't want such heavy handed NR applied and would rather treat it in Topaz. Here's an example:

I have to say I really have yet to find one of the pieces of glass that doesn't perform pretty dang good on the R5 this is from the not real notable EF 70-300 IS II USM Nano and I'm pretty happy with the results our big Finn Man posing for me

I can't agree more, the EF 70-300mm IS USM II is a gem!

Long time lurker here, canon 5d2 user with a bunch of EF, ZE glass. But the R5 + 50RF and 85RF are at another level altogether, and has rejuvenated my interest back in Canon!
Some pics below with the R5 and RF50 combo for fun, processed in C1 20.
ISO25600 @f1.2. The inner padding of the A pillar has some texture in the fabric which has been rendered faithfully without NR totally butchering it. The dashboard surface in the FG is smooth.
