I have been thinking about mirrorless switch for a long time. Nikon is way too slow to come up with a fully functional mirrorless system. Almost went with Sony. I felt canon's IBIS + lens IS was the best out there.. Even better than Sony. Automated quick focus stacking feature was the deal breaker for me.( Sony doesn't have it). This enables me to focus stack a scene while handholding. So right now I got a R5 , 24-104/4 and 100-500. So far happy with it but nervous about learning a new system.
I know eventually all three manufactures will have very capable systems.
