It's not very different from doing panoramas really, other than that I usually do mine hand held. I start of with shooting one image of what I want in focus, usually at f/1.4-2 with my 85mm G, after that I shoot overlapping with around 40%, I always shoot more than I need in every direction to give me more options when cropping.
I shoot in raw and on manual of course. When I'm done processing my images in acr I save them as full size jpgs, then use File-Automate-Photomerge in CS5 to make the panoramas.

When using the 85G vignetting can be a problem, so removing it in ACR is recommended if the lens you are using vignettes.

@Agentbird thanks for the tips, I don't have CS5 so I'll have to get a copy or look at other options. Have heard PTGui or autopano are good too, just need time to download and experiment...

Cool, can't wait to see the results!

I was out shooting panos today, in the woods of Oslo. Heavy fog and very nice light, can't wait to start processing and stitching the photos. Those darn D3x files take up a lot of space I tell you, shot about 40gb today alone
