I've added a couple shots of the same bird before it launched and there is nothing strange about them.
I'm pretty sure I was not using ES which might have explained this but I was using Mechanical as best I recall. Is there a way to see the shutter mode in the EXIF data?

That MS shot with the 500 f/4 IS II looks like some of the early problems with the 100-500. There is some motion blur, but I suspect you are referring to the dissolving wings? Perhaps you want to send that to Canon?
Was playing with my coke bottle 2x III TC which just returned from CPS $63 later as being "in spec". While I liked the 2x with some f/2.8 primes notably the 300 and 400 f/2.8, it never played well with my 600 IS f/4 or 500 f/4 IS II. With the R5, at least the AF is a bit more accurate, though in backlight or any tough lighting conditions, the 2x still struggles unlike the 1.4x. Anyhow, here are a couple at 1000mm, f/10, a fairly long way away, cropped around 50%.
... I was shooting the quail at like 1/400 at first and then kept dropping my SS to 1/200, 1/80, 1/40...I stopped there but maybe could have gone slower. Handheld the shots were mostly tack sharp except when the quail moved its head.
