Doing a quick stitch, shot wide open, gives a really unique landscape look that usually was the realm of MF systems.
I've actually gotten minimal use from my Sony 10-18 simply because I find I often prefer the look of doing a pano with the RX1, which usually is pretty easy for most subjects.
Having some selective focus in a wide angle shot gives such a sense of depth to the image.

Only problem is I usually end up taking 300-400 photos on walks like this which once stitched ends up coming down to about 100-150, and way too many hours processing!

Not much to do but I guess learn to be a bit more selective I guess with what all you shoot
I remember when I'd go out with my 4x5 field camera, I had 4 double sided film holders so 16 frames was all I had for an outing. I sometimes bought the Fuji quick loads which I could change in the field pretty easily without needing a dark bag, but there was still always the issue with developing cost etc. Even back then it was about $3 a shot....
I think digital has got us in the mindset we are supposed to come back with several hundred images all the time, when perhaps really we should just be coming back with a handful of good shots and consider that a success outing.
I think it was Ansel Adams who said if he can produce 12 good shots a year, its a great year.
Nothing wrong with shooting more, but it certainly does tend to backlog one's PC with editing task, and to what end do we do with hundreds of frames ? For me, they sit on my HD usually never touched again, basically just throw away images.
I've found for me personally, if I'm more selective with what I shoot, I am then more motivated to sit at the computer and spend some time processing, because lets face it, sitting down with 20 frames is a lot easier than sitting down with 200 frames.
When I have a few shots I'm pretty sure are going to look cool, I can't wait to get home and edit. When its hundreds of frames, a lot of them stuff I wonder why I even shot, I usually get bored/tired and don't even finish editing.
Also makes me less inclined to want to go shoot more, because I know I've already got so many gigs worth of stuff sitting on my HD that I haven't even gotten through yet.
Being a bit more selective with when I hit the shutter just seems to keep me feeling fresher and more inspired overall.

I completely agree millsart, and just to clarify, I was in no way boasting about how many shots I take, I'd love to be able to take time with each shot but way too often I'm in places I want to shoot with people who are not interested in photography. For the shots I've posted above in the Lake District, I was with my family who were rushing ahead whilst I was trying to snap what I could. I thought I'd just go through and cull the shots down later when I have more time, but it inevitably becomes a way bigger and more time consuming job, and sometimes it would seem easier to just delete them all.
Hopefully in the future I'll get more time and opportunities to shoot at my own pace, and not be on a deadline to be somewhere! When I do go out on my own, I often prefer film which means I can slow down and end up with somewhere around 75-90% of photos I'd be happy to post here, I've yet to leave a roll of film unscanned as there are no good photos from it. With digital, it is often more like 10-20% which are worth posting.

Are you doing them just hand-held, or something more precise with level pan & nodal/parallax minimized?

Not at all, keep them coming! I'm posting shots from last Easter, everything is just so dull at the moment, I'm dying to shoot but struggling to feel inspired
In your image above, it is interesting to me to see some "vignetting" (in the left hand third of the image), even though it is an 8 image stitch. Not true vignetting and purely cause by the light fall off from the sun, but interesting none the less. If one was there in person (as you were) you probably wouldn't even see the light fall off. Here in this image, it becomes a compositional element.

Well, I have been truly inspired by the talent on this thread. Enough that I finally broke down and just bought an RX1r. It certainly helped that I was able to snag a demo from the Sony stores closing in Canada for 50% off retail...
I've wanted to try one of these since they first came on the scene back in 2012, and I'm super excited to use it as a carry-everywhere travel/hiking/street camera to supplement my Canon gear. Who knows...maybe I'll never shoot with an SLR again!
Looking forward to participating in this thread. I won't add much to the overall quality but I'm sure gonna enjoy it, regardless!
