I try to be polite, but short with people - I really don't want to take the time to explain the whole thing, so a simple "Oh, it's only about a 12X magnification" and other downplaying remarks - I usually agree with whatever they say, and just answer with the simplist generalized statements I can come up with.
Frankly, the worst are other amateur photographers. I've had guys chew my ear off, all the while the sun is doing a once in a lifetime setting, whales are breaching, pteradactyls are swooping by, UFO's are....well, you get the idea. It's like, "Yeah, canon, ok, cool, yep, great conditions, ok, bye now...." It's so hard not to be a jerk, but I just want to make the photos I've been waiting the last hour for, and here comes Chatty Cathy.
Whaddaya gonna do....
*Add* - another thing - I have a hard time with digital P&S - I've only used one a couple times, and the whole back lcd view to frame the shot thing is just not my cup of tea - I need a viewfinder. I always think they will get home, look at their pictures, and go "WTF? - that photo dude totally blew that shot of us on the Tower Bridge!"

I had my 70-200 and there was another woman with a Rebel and some consumer zoom on it, I think a 70-300, she comes up to me and says wow how long is that lens so I say 200mm and she asks me why is it so big. If people come up to me and start annoying me I point the camera at them and start taking their photo, and usually it makes them leave. Usually I don't mind people though.

Wow John, that last picture is stunning. Also looks to me like you got a good copy of the 16-35.

I've heard all the common ones when out shooting with the one white lens I own - "Wow, you could take a picture of the moon with that!" "Gee, what'd that cost?" - but my favorite experience is when some idiot comes up to you, asks some questions, then starts telling you how wrong you are, why his lens is better, how his uncle had a Nikon, how come I didn't get one of those p&s cameras that have lots more zoom, etc. I feel like saying, "Hey, why don't I come over to your house and tell you your kids are ugly and stupid but at least I can tell you're their real dad?"

I find I get into some sporting events for free by hanging my 1D MKII and 5D and the 70-200 off of one.
I have had a security person taking tickets motion to me to come through a side door and escorted me to where the rest of the photographers were set up. no questions asked (I am not press)

True, my 'big' lens isn't that big, but it's black, and I can't imagine I would get more stares with a white lens, so I really think it's all about size and not color. I was shooting some detail shots around Vienna last week with my 80-200L and everyone who looked at me had this 'holy crap' stare going on. Some people were nervous if I tried to catch a candid of them. Others just thought I was nuts (it was pretty cold). I can't imagine what it would be like if I had a 400 f/2.8 or something that was actually large!
FWIW, I get the 'can you take our picture' requests all the time as well, even with my dinky setup.

One of my first experiences notable experiences with my 20d was with the 17-40L. I'd just picked up the camera and lens and was looking for something interesting to shoot. I stopped by a local quarry and was snapping shots of the gravel pit & machinery and a few shots of some of the large vehicles that were parked nearby.
After only a few minutes, a guy drove over in a pickup and wanted to know what I was shooting and "who I was with". (I actually looked around me when he said that - I was a bit surprised at the question and it took a minute to understand what he was asking). I tried to explain that I wasn't really "with anyone" and I was just a guy with a new toy to try out but he didn't look like he was buying it. Fortunately, he just asked me to leave & didn't give me a major hassle.

That one's a clasic.
The other one that annoys me is people who think you should be their honorary tour guide... Since you must obviously know the area/event/animals/etc. better than the general public. "What kind of bird is that?" "How often do the boats come/leave?" "How do I get from here to landmark ____?"
The other thing I've found that really freaks people out is the 580EX.

"How many fish you get with that?"
Well, Michale, how many fish did you get? It must have been the beetle nut you were chewing. I hear it works to spit on your bait.
I hate to be a twerp but some times they ask,
The local expert: "How many megapixles?"
Me: "Well, the 1D has 4 MP......."
The local expert: "Ah, my little Sony has 6 mp."
Me: Yes, but can it do this?" Chaka-chaka-chaka-chaka-chaka-chaka.........
You gotta love the machine gun.

lol great stories
I rember when I was at the zoo with a bunch of FM members
a random tourist commented at my friend's 400 f/2.8 " WOW, now that's what I call a wide angle lens"

I do like that, if your wielding a serious looking rig, people get out of your way or refrain from cutting you off.
If someone asks me to take their picture with their P&S, the answer is "Sure, for a hundred bucks." No takers yet, just laughing and backing away. I usually say, "Just Kidding" and take the pic, if they still want.

I've also gotten the "You must be able to see all the way to the moon" comment; I still can't quite fathom what they were thinking.
I was shooting with the 70-200/4 at an auto show once, and as a couple of guys walked behind me I heard one say in a rather snide voice, "I guess size really does matter."

People generally don't believe me when I tell them that I have no idea how to operate their P&S.
Once I was shooting a couple of tourists with their disposable camera, framing it with them off-center both for aesthetics and so that they could see the full name of a local restaurant, and they shuffled over to be in the center of the picture.

ok, here's my little story...
shooting my 24-70L w/hood which apparently looks very large to some people... a guy comes up and says, "nice lens," and then showing that he doesn't know anything about it points out to the far horizon and says, "I'll bet you can take pictures of something that far away, right?" I smiled and said, "no, really just from me to you." He looked puzzled... then I whispered, "but they'll be really good." We both laughed.
