Exactly the info I was looking for, if i could get a decent 28 / 40 / 75 spread of quality M lenses that adapt well and have a bit of character ill give those a go

Presumably there were other reasons that inspired the switch that were more highly prioritized than the manual focusing experience? If so, I'd consider how much those mean to you in the overall picture and if some inconvenience in the manual focusing experience is a worthwhile compromise.
If you're switching for access to certain FE lenses, were you aware that you can adapt FE to Nikon Z and retain AF? I don't know the full details and expect there would be some compromises, such as adapted vs. native AF performance and also the impact of sensor stack differences on image quality, but if those are not significant, it would seem that Nikon would be a more appropriate camera platform.

In case you had not figure this out yet, every manufacturer has some type of glass in front of the sensor silicon. Leica has the thinnest, in order to handle rangefinder glass, etc, I think it is something like 0.8mm. Nikon is second with 1.1mm. Sony is much thicker at 2.0mm (Canon is at 2.4mm). As such, cameras like the Nikon Zf handles M-mount glass better than Sony, especially at 35mm and wider.
If your goal is to enjoy M-mount glass outside the Leica rangefinders, I think the Zf if the best platform to do so - the thinner sensor glass in combination with the Nikon MF assist tech makes it far better than a Sony a7CR IMO.
PS The CV 40/1.2 in E-mount works well, even if isn't much "fun" focusing compared to Nikon's method, but it renders well with its character and all. Perhaps start there? Personally, I am thinking of going the other way, I'm a Sony shooter but I am thinking of adding a used Nikon Zf just to enjoy some MF glass on it
