I have a mac mini server that I'm selling. I've used this for about 1 year and done all of my editing on it. It is fast with lightroom, photoshop, indesign. I installed 8GB ram and upgraded it to Lion.
It has 2 500gb drives installed, I ran them as Mirrored raid but reinstalled lion and reformatted it to have 1 TB raid 0. It is the only way to get a mac with a raid hard drive without going to the Mac Pro. Fantastic computer.

It comes with the original Snow leopard server installation disk also.
I will now add the superdrive that I bought too since the server doesn't have one built in.
I just checked and it did not reinstall as lion server. But that is only because I did a clean install straight from the lion disk. If necessary you could reinstall snow leopard server and then upgrade to lion. Or I could do that for you. I had been running lion server since it came out though.
