My point about it being a single shot is when you use gear like a Z7, A7riii etc you're getting a single 'scan' that is about 8500 pix wide. So there is absolutely no need to stitch images together scanning panos (like this one), medium format etc.
I use a Lomo Digitiliza 35mm film holder for 35mm pano shots, their 120 holder for 120 panos (when I had a Noblex 150) or regular 120/220 film images.
