The Pentax 31 is a wonderful lens—used it for years. Still miss mine. Coverage on the GFX is surprisingly good, the draw is quite nice, and the price is quite low nowadays. Really a bargain for a nice rendering 24/1.4-ish on MF option. If I had a GFX, the Pentax would be used frequently, especially given the lack of fast wide glass for the system.

You don't own the combo anymore? Why not?
The technical and IQ difference from the 50MP non-BSI and non-stabilized sensor was not significant to me compared to Sony's cheap but superb 42mp FF sensor, and I don't prefer the aspect ratio of the GFX line as I often 16x9 or crop for longer photos, so some of the sensor real estate was wasted on me. Files had a bit of a different feel, a pinch more DR, I liked the tonal response better, but not enough to justify running two systems.
And more importantly, the GFX lenses, while very well corrected, are large and somewhat slow when compared to FF, and they favor more modern renderings. There's very little 3rd party support for current glass (like CV or Tamron or Sigma). In FF terms, they haven't put out a f2.8 or faster 18-24mm prime with good coma correction, nor do they have a fast-ish f2 28-35mm lens which is my most used. I did find some nice adapted glass, but the FF world is just sooo much more expansive in that sense. So, overall, a poor match for they way I shoot.
Plus, the first gen. 50s and 50r really felt like a line in it's infancy--slow, bad AF, EVF on the 50r was meh. The second gen, especially the 100s helps the sensor issues I had and overall shooting experience, but the lenses are still not that attractive to me. And the price and size difference of the system to is significant.
I absolutely love this lens. I think it's my favorite CV lens to date. All a7r2 NKIR v3+ Quite happy with the coma correction too--can definitely use for astro.

This assumes you desire sharp and modern and have a camera with a suitably compatible sensor stack.
I would recommend to give the Konica 28/2.8 in M mount a try. It's very similar, in both design, performance and size/weight, to the Leica Elmarit-M 28mm (v4 - pre ASPH). IMHO, the Konica 28 is an under appreciated WA lens in M mount and you can certainly find one under a grand.

But all 2.8’s…for me those options are simply too slow. Same with the ZM 28/2.8 and Contax G 28 which I liked as well. I did like the CV 28/2v1, but never shot it on a Leica or modded sensor.
You can already snag a new CV 28/2v2 off the b/s board for $700-750. Incredible value.

For under a grand? The original 1.9/28 Ultron ASPH, LTM. It's the best of the three imo (I have all three).
I have the original Ultron 28/1.9 as well as the latest 28/2 v2. Both the 28/2 and the Lux 28 ASPH are perfectly calibrated for focus with my M10-R and M246 cameras but the 28/1.9 back focuses with both Voigtlander and Chinese 28/90 LTM to M adapters. Would that suggest that the problem is with the lens rather than the adapter(s)?

What do you think of the 28/1.9?
I used it a few times when I first got my M10-P then it sat in the dry cabinet until recently. So I can’t really offer an informed opinion. Ideally it could fill the vacant vintage slot that was previously occupied by the Elmarit-M 28/2.8 v4 (according to my “at least one vintage and one modern lens for each of the focal lengths from 28mm to 90mm” rule). But not unless I can sort out the back focus issue.

Probably. It might depend on how much. And it depends on consistent ability to nail focus... I'd start with the lens but, the rangefinder adjustment could be off just enough for some lenses to work fine but others not so much, it's down to tolerance extremes to a certain extent. It helps to know each lens' quirks combined with the quirks of the mechanical tolerances. I've used the 1.9/28 on the M, A7, Z 7. It's a brilliant combination of sharpness and rendering.

Would be curious to hear more thoughts on it and see photos if you have any to share!
