In your video, the dude has the camera in continuous mode and it clearly shows a "time lapse" effect, which is absolutely true. I can only hope a firmware patch will fix this, or at least make it more usable.
I should also point out that with proper exposure settings, this "time lapse" effect is less noticeable. Slower shutter speeds will magnify the effect - which is the case for any camera.
It's exactly the same in single shot mode. That's just how the eos R works right now.
Instead of giving you a blackout at the exact time of pressing the shutter (like most cameras) the R shortly freezes the EVF/screen AFTER the shot has been taken.
This is very annoying when you try following something that's moving or move your camera for the next shot. The clock example very clearly showed it. Imagine the clock pointer being a walking person. That person would stop walking for a slight moment after you take a shot.
Just try it and you'll see that your info isn't correct.
The M50 has that same freeze between shots too, and when I shoot sports with the EOS R, I just hope the series of shots are good when it is firing in 10fps bursts.
I did try it with my dogs in the back yard. I didn't notice it. I'm not saying it isn't happening, as the clock clearly shows it, but I'm saying for normal everyday use, I didn't perceive any lag in single shot mode. Continuous is a different story altogether. In that case, I can confirm what you see in the video with the model. I can only tell you what I experience with my own camera.

I rented an R, 24-105/4L, and control ring adapter for two weeks over Christmas-New Year, thinking mirrorless is going to be the future and wanting some experience upon which to base future decisions.
My main photo effort was targeting flying, fishing bald eagles. Most of the time the R was coupled to a 500/4 Lii, with and without 1.4x converter. I feel when I performed well the camera performed well. My infocus percentage was very good when I was good. I was always in thumb button and c-af focus with image review off and other settings aimed toward maximizing evf refreshment rate.
I have used an M5 for a couple of years now and it does most definitely show you the frame you just shot prior to the next one. The R, I feel, is briefly doing that but then refreshes to give you a live view in the evf. All of this in less than a couple tenths of a second. To me, this is similar to the mirror blackout, which on SLRs is more of a gradual thing than what was demonstrated happening with the Sony mirrorless. I adapted to the R quite well, but I understand how others may have problems with it. I would probably have more problems with the Sony blackout, but do not know for sure since I have not tried a Sony in the field.
I also used the R around home, mostly photographing the border collies chasing a frizbee with the RF 24-105. There I felt the duration of the previous photo was shorter and the refresh longer between frames. I had pretty good success when I had some light. Not much light, not much success. No practical way to measure this duration though. I would imagine to do a realistic test of this it would take coupling a camera to the viewfinder evf and setting up a motorized test bed to follow a motorized moving subject.
I imagine in a few years the performance of the A9 will become the norm for mid-range cameras as sensor readout and processor speeds increase and circuit sizes decrease so overheating is less a problem. Organic sensors, I believe, offer the promise of much faster readout and cooler operation. And it is fun to think about what an A10 and R1x might have to offer two years from now.
