I'm shooting with this camera all the time but don't stop by this thread very often because most of my work is posted on the Manual Focus Nikon Glass thread on this forum. But I've been inundating that thread today with shots I took this afternoon with the 400 f/5.6 AI-s ED-IF and I have to stop...
So this is one shot from my ramble with that lens mounted on a Manfrotto monopod. The lens is probably light enough to hand hold but the monopod helps. This was shot Manual Mode at 1/500th and f/8 which required a bit of a boost of ISO to 400. I love my D700.

I'm pretty sure the point of this thread that in photography, old doesn't necessarily mean it is out of date or incapable of making great images. There is nothing wrong with getting a D700, but with FX comes a commitment to FX glass. If you're happy with what you're getting with your D300, keep shooting it and invest in glass before you bother updating the body.
The lure of the "latest and greatest" will always be present, in large part because manufacturers need consumers to believe upgrading will yield better results. But unless you want to shoot in the dark and to produce billboard size prints, the D700 is unexcelled. Every time I use this camera I smile to myself. Yes, it is possible to lament what the camera doesn't have... but so what? What it does have is plenty for practically everybody.
