It looks like the Escorial decades back when there were no/few tourists, and I miss the large dome. How did you make it, or is it something else?

It is that Monasterio, yes. The shot was done at lunch time (little people around) on a stormy sunday (little people). Besides, it's a 20 seconds shot so those who passed by aren't visible in the photo. The dome isn't visible on this angle.
