My answer's worse. You get a feel for it. For ultra fast glass I find I've just gotten use to moving in a certain way when focusing and recomposing. Essentially, you want to rotate the camera using the sensor as a pivot. My technique got way better once I went digital.
I find the best technique is chasing toddlers around @ 0.95. Trial by fire.
