Thanks again for tolerating a newb... But these assignments really are a fantastic way to focus direction on a subject I otherwise would never have thought of shooting. This gives me great practice using different settings and learning what they do. Still having a problem with getting good crisp shots.....
Even thought its still got plenty of issues, out of the hundred or so shots I took of this subject - this one stood out to me above the rest.

Interesting shot although I'm not a huge fan of shallow DOF. A lot of people love it, though, so don't go by my response. In looking at your EXIF data it's no wonder you are having problems getting sharp shots - if you are shooting at 1600 ISO with a Rebel you will get a huge amount of grain. It wasn't like you were shooting something nailed to the floor so I'm curious why you had to do it in such low light that you needed those settings. If you want a crisp shot, try going outside in the afternoon shade with your camera at 100 ISO and take shots at f11 or even higher. When it's darker, you may need a tripod to keep things steady but you'll be much happier with the results. I almost always use a tripod and even a cable release - even at fast shutter speeds. Given the difficult settings you gave yourself, I think the shot came out remarkably well.
This is one of those Aha! moments...I've just stopped using my auto settings determined how to properly use my camera - I was starting to understand the f stops and shutter speed but ISO was eluding me!!!
I did try to take some outside (under a covered porch as we getting a bit of rain - still feeling the after affects of Storm Fay)...I was either over exposing or under exposing - I shot with so many different settings I didn't know what was what - but ISO was probably the one I didn't change or not on purpose...
I'll use your suggestions and try again before weeks out and see what I can come up with.
I agree with Endre's post, especially how the shot is still nice considering the high iso.
My bit to add is that when I started (which wasn't that long ago at all), I read a book called "Understanding Exposure" that a friend lent to me. If you can find that, it's a great read.
Thanks for the comments and book recommendation!! - No bookstore within 45 minutes or so but I I'll check our small library on the way home..If not I'll trek out to the mall this weekend.
Took your advise and started playing more - unfortunately it was pouring again this afternoon so it's another indoor shot....But I did get much more clarity than before -
