The man probably lived close by and ate supper at the night market regularly. Noodles and vegetables were quite inexpensive- and a staple in the diet of many Chinese.
Even though I was among the few non-Chinese at this market, Hong Kong has long been accustomed to having foreigners in their city/colony (still part of Britain at the time), so I was largely ignored. I saw the man, preset my old film camera for exposure, found the perspective and comp I wanted, and waited without looking at him directly. Then I quickly raised my camera, zoomed, focused and shot. Then turned away, lowering my camera. He never looked at me- just lost in his thoughts.
