I have very limited photoshop skills. Just curious to see a good (easy) post workflow for nature pics, or if a picture style in-camera would be a better option for me?

Given that every image is different and every photographer’s idea of how that image should be is also different, I think you are asking the impossible.

I'm a video guy... and to be honest, I've done all cc/grading for my pictures in premiere pro! I have photoshop, and just more or less want to polish up my rapter pics a little, without too much advanced knowledge/know-how.

If you have a current version of Photoshop, the Adobe Camera Raw utility that comes with it has the same raw processing engine and 95% of the raw development controls that Lightroom has. So unless the digital asset management functionality of Lightroom is important to you, you may be able to get by with what you have.
If your version of PS is older though, ACR may not support a newer camera and it won't have some of the raw development improvements that have been included with newer versions of the software.
