But if you're shooting above 1/60th of a second, then you'll also probably be dealing with light cycling. The fact that the A/C current through the lights causes them to fluxuate during the time it takes the shutter leafs to create an exposure.
Then, custom white balance, even RAW, won't help. You end up with a gradient of colors across your image.
Best advice (from 10+ years of shooting gyms with ambient) is to either dial Kelvin into the light types (adjusting with consideration to the age of the bulbs) - or when doing a custom WB, make sure you have your exposure set below 1/60th to capture the full spectrum of light.
Then, again, you'll only have a base configuration of what the lights will give you over a full cycle. For the 'instants' you're capturing, you'll get from deep reds, to bright greens and everything in between.
The thing to remember is that while we as photographers are critical of the color variations, it's the sports action capture that is much more important than the light gradient....unless you have gobs of time after the shoot to try to fix all of them.
