John, I've got most of the Mamiya lenses which I use on the Mirex, 35 N, 45 N, 55 N, 80/2.8 N, 80/1.9 N, 110 N, 120 A and 150 A. They all work just fine, but I'm not sure which aftermarket lenses fit the M645 mount. It's an interesting question, I've not looked for or seen any other non Mamiya lenses for that mount.
Of all of the above I mainly use the 120 A and the 2 x 80's. Although the 80/1.9 has noticeable CA wide open, it's still very sharp and works well with the Mirex. The 35 is great as a general purpose, street lens.

if you're talking about focal lengths, then you can use any M645 lens you can get your hands on. If shifting is your prime aim, all the lenses should adapt well to those movements.
Tilt is another matter however. I've found that on the EF system, beyond 80mm (Mamiya) you start to get shuttering effects from excessive tilt, that limits the usefulness of longer lenses for that purpose.
Also, please tell us about the other end of your mount...the camera body side.

I was wondering if other format lenses could be used on the mamiya mount with adapters, like using Zeiss MF, Hassleblad or pentax 67 and the like?

I have ordered from them the Pentax 645 -> Mamiya adapter as well, which gives access to use the Pentax 645 lenses as well. But still haven't tried it.
Up to now I used the Mamiya 120 and the 35 N with pleasing results. The Mamiya was also without using tilt/shift one of my favourite lenses on the Canon.
johnahill, you have two of the best; don't neglect the 120/4 if you come across the right priced one, not that they are too exxy anyway. I love the build quality of these things.
