Unless the travel situation has changed incredibly, you'll be required to stay at very expensive joint-venture tourist hotels everywhere you travel in China.
As China enters the 21st century (theoretically), you may not be able to visit Chinese homes. But try to go every nitty-gritty place you can, in addition to the Great Wall, Li River cruise, terra cota warriors in Xi'an, Hangzhou's West Lake, the Imperial Palace in Beijing, etc.

China has completely changed now. You can travel and stay (outside of Tibet) just about anywhere you want. You can visit any Chinese house you are invited into. The only travel restrictions that I am aware of concern Tibet and the Northwestern provoke that has problems with the muslim population.
Your only problem traveling outside of these areas will with with the language as English is not widely spoken.
