I had been using my D700 with these lenses and had the non-CPU data programed into the camera for each. All the lenses are in great shape and I spent quite a bit of time getting good copies of each.
So now I am looking for a mirrorless Nikon body to shoot with these lenses. Have not been keeping up with what is available from Nikon and would like some suggestions as to what bodies to look at, and the best adapter for mounting them. Would prefer at least 24mp, a mirrorless body that works well with MF lenses and allows for registering the non-CPU data. Appreciate your thoughts!

Welcome to this fabulous thread, and back to Nikon, SpecFoto. I have no doubt that you will very soon receive a comprehensive set of responses to your query; it's like that around here --- lots of experienced and knowledgeable people willing to share generously. I don't know about the Nikon options, only Fujifilm (which can register the focal length of each MF Nikon lens in the exif data, but not the aperture or shutter speed), but there are several folks here who have been using each of the mirrorless Nikon bodies.
Here are a few more scenic nature photos from last fall, courtesy of the 2.8 f/3.5 H (first two) and the 55 f/1.2 SC (third one), ably assisted by my Fuji X-T4 with LensTurbo II focal reducer.

The Z5 seems to be what I was looking for, it has a good EVF at 3.69 million dots, dual card slots, 1/8000 shutter speed, a robust full mag body with weather sealing and a standard tilting screen. Plus it has great Nikon ergonomics with 3 user control slots. The body with FTZ II adapter is $1,247 brand new. The only things I can't seem to find is how many non-CPU lens slots and does it offer any instant magnification when focusing manual lenses?
Been a while. Don't get out much with the Nikkors for fun hardly anymore due to time constraints.
However, I did lug the 16/3.5 AI to Norway and caught some OK pics of the Aurora Borealis this past Thursday.
-12C during shooting - my fingers were so cold I couldn't change lenses so the 16/3.5 stayed on the A7C.
Most all pics shot at f/5.6.

You can register lenses and when using the FTZ (not other adapters though) the focal length is written to Exif. In contrast to Nikon DSLRs the aperture used won’t be recorded.
Not sure what you mean with instant magnification. You can program a button to punch in but it won’t happen automatically when you focus, if that’s what you meant.
The Z5 is a great deal. But maybe also worth considering a used DSLR to enjoy these lenses

Welcome to the nicest corner of FM. I have the Z5 and highly recommend it, although I do not use it as much for MF Nikkors due to also having a Df.
Onto your questions, just like all MF Nikkor-Supporting DSLRs, the Z5 has 10 non-CPU slots that can be registered. The only difference with the DSLRs is that although you get full Exif, as far as shooting aperture is concerned, the mirrorless Nikons only record the aperture you put in your non-CPU register. E.g. My Nikkor 55mm f/2.8 AIS pictures are recorded as having been shot at F2.8, even though I may be at F8. That's due to the FT-Z (adapter) not having the aperture follower tab like the DSLRs.
BTW, the FT-Z II is the one to have. It is ergonomically a much better adapter than the FT-Z I due to lack of the tripod mount.
The second question, regarding instant-magnification, I have seen it discussed as a nice thing that Sony mirrorless has but as far as I know the feature does not exist on Nikon mirrorless. You can use the + and - buttons to magnify the viewfinder/lcd view during shooting for precise focusing.
Went to the Orchid expo at the San Diego Botanical Garden. Flowers were in a glass house, throwing shadows and sunlight randomly, was pretty tot he eye but the camera did not like it. More specifically, the processing software from Nikon oversaturates shadows if pushed. Did my best.
Will return with fill flash, will also bring a circular fisheye.
Considered the 55mm 1.2 CRT, or the 70mm 5.0 micro, but ended up taking the pedestrian 105mm 4.0.
