Same here. I originally was thinking I needed at least three, even four lights.

But after seeing this thread, I actually prefer the one light look then the totally whitewashed shadows of multi-lite photos.

Single AB800 w/ 7" reflector. Can't remember exact placement of the light. But I think it was slight camera left.
