p.1 #1Would you buy NEW Z8 ?
I would like to get a new camera soon. Would you still buy New Z8 ?

Z8 - Price with Taxes $ 3354 ---- never liked big form factor and maybe there is gonna be Z8 II - but it will cost at least $1000 more. Possibly new Z7 III smaller with new better battery ? --- both of them could see release in 1 year from now

Sony A7rVi - Price with Taxes $4563 ---- looks like perfect camera... but getting new batteries and memory CFExpress A cards could be additional $2000. Many great small lenses for landscape and travel / getting 70-200 f4 will make a great kit

Z8 current price for me is tempting and I already have 6 good Nikon Lenses plus all filters. Sounds like smart decision to buy Nikon - but what really bothers me is how slow Nikon lately is with making interesting camera bodies

You should consider the lenses and entire system, not just a particular camera model. You should have at least 2 bodies anyway for serious work.
I got the a7rVI on pre-odor and am happy with it. It's more of high IQ camera as compared to the Z8 being more suited for action and general use like the Canon R5 II. The a7rVI IQ in MS mode at low ISO is fabulous. With a good lens and solid technique, 67MP is very impressive if you are used to 45MP and under. The difference is palpable. At ISO 100 the DR is really excellent also, since is does nto suffer from the fast readout/stackable sensor noise like the Z8. You do need to the keep the aperture reasonable since diffarction is more obvious at 67MP.
Ideally there will be an a1 III in future as a companion to the a7rVI.

To be practical can you rent gear in your region before having to go all in?

It sounds like you’ve already made up your mind as you don’t like the Z8’s form factor, while the RVI seems like the perfect camera to you.

A tempting price won’t make you enjoy a body you find too big.

Some love the Z8’s size and weight and find it balances medium to large lenses really well. Others find Sony bodies too cramped between the mount and grip, plus their pinky finger having nowhere to rest. It's a personal preference and you are better suited with current selection of Sony bodies at the moment compared to Nikon offerings.

I also wouldn’t count on a Z7 III arriving within a year. Unless Nikon announces it, neither the camera nor that timeline is guaranteed.

If Nikon’s release pace bothers you and Sony offers what you want today, switching sounds more sensible than waiting for something that may or may not materialize.

Personally, I don’t hold it against a brand when an unpromised future camera hasn’t appeared.

Many Z8 owners have effectively ended up with a more capable camera than the one they originally paid for.

I didn't buy a Z8 because I'd rather have a Z7III, but that isn't available so I bought a Z7II.

I'd rather have the Z9 instead of a Z8 for the battery grip but I don't really need those kind of speed demons and I'd rather have a camera tuned for low ISO and flash photography and in the past there were stories of random instances of banding and/or issue with LEDs etc.

The A7RVI sensor in a Nikon body would be great, that's essentially what I'm looking for but honestly I'd probably be fine with 33 megapixels or so tuned for low ISO and flash photography as mentioned. I'm just processing some pictures now where the 45 mp of the Z7II has been helpful though.

If you have camera body you no longer use/don’t want, check out the Nikon trade-up program currently running. You may be able to knock the cost down a bit.
