Pro + 32GB ... that's my minimum threshold. You can get more / Max / 64GB / etc. ... but, I always recommend Pro + 32GB (shared memory).
Granted, that'll push $2K a bit, but it will be worth it. I bought / returned multiple MBP units, Base, Air, Pro, Max with configs of 24, 32 and 64 (been a few years). The bump from Pro > Max wasn't readily noticeble. The bump from 32 to 64 wasn't readily noticeable. BUT the DROP from Pro > AIR / Base was. The drop from 32 to 24 was. Thus, my recommendation for folks trying to find that line of bang / buck ... Pro + 32GB is my minimum recommendation.
That said, if you like ... buy it, try and return it, buy a different one, try it return it. Rinse, repeat for yourself. Over an extended period of roughly 6 months I went throught 5 or 6 different configurations. Apple was ALWAYS super receptive to my return (which likely fed the refurb inventory).
I talked with the store folks about it and we got to a place where we'd laugh when I came back to return another unit. BTW, that also included 14 and 16 inch variants, and the 15 inch Air. BUT, they were entirely SINCERE when they said they just want me to be sure and get the one I want ... i.e. NO BUYER's REMORSE ... and, while it took me (newbie to Mac) a while to work my way through so many rigs, they were cool with it.
So ... don't be afraid to harness their return policy (including refurbs, that I mostly bought). I ended up with an 16" M2 Max, 64GB, for my personal decision, but from all that I learned about the pipeline performance of multilple memory modules bandwidth ... 32GB is the minimum I'd recommend. Dropping down to 24 became "laggy" compared to 32 ... especially when doing things like heavy brush work.
Personally, if I had the choice between an M5 with 24GB and an M4 with 32GB ... no brainer for me, 32GB minimum, in a Pro Variant. If the M5 was a few $$$ more, and you wanted the M5 power vs. the 4 Power, sure pony up the $$$. But, for anything photo editing oriented, I would NOT recommend 24GB. General use folks (i.e. not doing brush work, etc.), sure 24GB is a bargain. Actually, that was the bang / buck point I thought I would be "smart" and get ... until I used 24GB after having used 32GB. 24GB, not so smart, after all (imo).
