I just purchased this camera and I'm trying to set up different modes and I can't figure out how to switch focusing from the shutter release button to the back of the camera so I can pre-focus on something recompose and take the picture from the shutter release without loosing the pre-focus spot. Thank you for your help.

Search for setting up BBF on R5II on YouTube as there are several methods to customize it, but FYI you don’t have to focus and recompose like we did on a DSLR as the focus point can lock on your subject and you can recompose while using the shutter button only if you prefer todo so.

How does the camera knows where I want it to focus

It should be similar to the R6m2 menus, which are. Go to the menu next to the "star", the third director > Cusomize button > scroll with the rear wheel > until you get to the button you want to cusomize. Hit set, pick what you want that rear button to do, then hit info and you can program all the things you want the button to do. I set up the two rear buttons <AF-On> and <*>, one for animal (or other subject) AF and the other for spot AF. You can use either the toggle to select the spot/area and there is also the ECF for the R5 II. There are tons of options.
