Obviously very late to reply on this. Where did you go?
I would have highly recommended Santa Teresa/Nicoya Peninsula. One of the most beautiful places in the world. ST itself tends to attract a lot of young people for the world class surfing but we just avoid the busy areas (lots of great amenities to enjoy though). No big hotels or developments in ST which we love. The best sunsets I have ever seen in my life were in or near ST. Not sure why it is so spectacular but it is breath taking daily.
Near there: Cabo Blanco nature preserve hike is amazing. Montezuma waterfalls - bring your camera gear, water sandals and swim suit. It's very special.
A bit further away: Dominical is amazing tiny little surf town.
Never been down to Manuel Antonio but I have heard it's amazing.
We love the ST area so much we built a beach cabin just 10 min north in Manzanillo. Quiet and beautiful, but no crowds because there is not much surfing.

I should mention that pretty much anywhere I have been in CR we have seen so much wildlife. Unreal number of butterflies, toucans, howler monkeys, giant lizards, sloths...etc. We have a family of monkeys that hang out over our cabin every morning while we have coffee & read the NY Times - so cool. There is also a butterfly sanctuary we went to, but I forget where it was. Incredible though. Giant hand sized, colorful butterflies.
I don't think it is active now, but we have went to Arenal and sat in hot springs after dark and sipped a beer and watched the volcano (when it was active). That was surreal.
Sorry for going on and on. My favorite place in the world (if you get away from the developed areas).
