I'm sure this has already been said but get the X-E5 and the 16 2.8 and the 35 f/2! Then you get exactly what you want in a package not much larger.
I borrowed an X100VI back last summer for a few months (At the time had my X-T5 with 10-24, 16 1.4, 23 f/2, and Sigma 18-50, sold off those 2 primes since), and really had this desire to downsize and consolidate, thought the X100VI would be perfect. It was, absolutely, and 35 equivalent was my go to prime for the last 2 years or so, but...I wasn't willing to let that be my widest lens. I like shooting wider quite often, more telelphoto less often (and willing to crop for that). Since I'm mostly just documenting family life, stitching a pano for wider isn't an option.
I bailed on making the VI my only camera. Like you mentioned, if it were a 28 equivalent (without having to use the WCL), I think I would have made it work, for the sake of simplicity. The GFX100RF is super appealing to me for that sake buuuuttttt the price

For tighter fov, I'd consider the adapter, however it's the better option if 35mm still your main focal length. Otherwise x-e5 is the obvious alternative, question which lens, what's tge expectation. 33 1.4 is quite large for that camera, but seems manageable paired with kit pancake as daily carry setup. If you want completely go for 50mm, Viltrox 35 1.7 is a good budget lens, main disadvantage the lack of aperture ring. 35 1.4 has more separation and character but not a sharp lens, AF is slow. Xf 35 f2 is the choice if you want aperture ring and better AF and sharpness than 35 1.4, still maintain the compact size.

In general, if you are going to be using larger lenses (big zooms or large aperture primes), the weight/size pluses of the XE5 won’t amount to much for most users. (Occasionally sticking one of those lenses on the small camera can be fine and will wok well, but if you use such things much…)
If you are looking for primes for the XE that feature full AF integration with the camera, Fujifilm offers a number of pretty small lenses. Two starting points are obviously the 23mm f/2.8 or the 27mm f/2.8. The 18mm f/2 is pretty small. If you need something with a larger aperture occasionally, the old 35mm f/1.4 is excellent and remarkably small for a lens of its type. The “Fujicrons” are useful options, too, with f/2 apertures and low weight and size: 23mm, 35mm, and 50mm. (The 50mm f/2 is a special option if you want something a bit longer.)
A lot of the “better sharpness” talk is more about either reputation or over-focusing on specs. These are pretty much all extremely sharp lenses that will perform very well on teh 40MP APS-C sensor. (For example, ignoring price and size and choosing the 33mm f/1.4 over the 35mm f/1.4 due to “sharpness” is missing the point, since both lenses are very sharp.)

Right now, if making a rational choice, I would go with XE5 and a small lens of choice. I say that a s loyal and long time X100 photographer since the mk1 version.
The real "problem" in XE5 is that when end up buying another lens (that happens), it presents to you as ILC. Nothing wrong with ILC, but simplicity of X100 is lost when one has options and starts to change lenses.
Regarding image quality, I have X100V and it is fine, VI must be slightly better. The latest generation X100 lens is good enough even wide open, and even the original lens was much better than its reputation.

When I first got my X100vi I was in the same camp with whishing the 35mm equivalent focal length was closer to 50mm. But I fell in love with the optical view finder and the small compact size of the X100vi. At the time I first got the camera I also had the X-T5 with some zooms and primes which I would use when I needed a different focal length. I would always carry the X100vi every where I would go and now today I and learned to see compositions with the focal length of the X100vi. I have also sold off the X-T5 and my prime lenes and picked up a X-H2s since this is the perfect body for motor sports and wildlife work.
So my advise is give the X100vi some time and see if you can learn to see in the 35mm focal length.

Here's the thing. As the photographer, you control whether you get "simplicity" or something more flexible with an ILC like the XE5 or XT5, etc.
When you want that simplicity, you can just stick a 23mm lens (or whatever your one-lens default is) on the camera and leave everything else behind. That's what I do with my XT5 most of the time.
But when it is useful to have alternatives you can choose that approach, too.
That said, while I made a different choice, I could see having an ILC and a fixed lens camera like the X100vi in some cases. There are several potentially useful ways to integrate the two.

I had the graphite xpro2 - best looking camera ever, imo. Loved it but sold for the xt5 - wanted IBIS. Don't regret selling but looking forward to the xpro4....You know the 5.76M EVF, LCD of the XT5, 8 stops of IBIS. 40M sensor with 2 more stops of DR and looks of the xpro2. Ok, I'm awake now. It probably won't have anything like that.
