I am a Nikon user (not a pro though) and had similar thoughts, until I bought a Z9. I never regrated a bit with that decision. With the ZF2 adapter all your F glass that is AF-S will work like a breeze. Only caveat, AF-D lenses. For them, I would say keep your D700 and get rid of D750 (purely for the rendering of D700). Focusing with pre-AI and AI lenses is so much easier with mirrorless.

The fact that it has always been a dream camera for you is plenty of justification. (imho)
I kept my D1x and D2x as collectibles. Don't use them anymore, though. I should probably have kept my D700 & especially D850 (the last best DSLR) too, latter of which I still used until very recently. (Also had a D750 and meh didn't need to keep that one, felt more disposable than the pro-tier bodies. Still say it should've been called D650.)
