As others have mentioned, the new methodology for film recipes is to store them inside the numbered custom modes. They control far more than just the selected sim settings. We would need a wheel with C1, C2 etc. to do that.
This is a dumbed down camera for beginner photographers, no need to be mad about what it isn’t when there are plenty of options that give you what you want within Fuji already.
The price on release in Australia is about $A200 more than what I paid for my X-T5 last year. I'm guessing Fuji wants it to be seen as a premium camera like the X100VI.
I don’t see any need to upgrade from my X-T30ii - it has the small form I’m looking for to use with light lenses (the Fuji 27 f2.8) & Voigtlander 18 f2.8. I don’t need the 40 mp sensor; I’ve been impressed with the 26 mp. IBIS would be nice for darker situations, but I don’t shoot video & just use these shorter focal lengths, so not really needed.

I have the X-T30ii as well and an X-T5. In practice I use the X-T30ii more. In terms of the sensors, I'd describe the 26mp versus 40mp as just being a little different, rather than one being better than the other (unless you really need 40mp, which few do). And as you say, if using shorter focal lengths and using large aperture primes, you can pretty much get away without IBIS.
I personally would rather use the X-T50 and be able to put a sharper lens on there over the x100VI, but it is great to have choices. If you can't a Fujifilm camera that fits your needs at this point, the problem is not the hardware...
Now why did they put a lesser EVF in the X-T50 vs the v100VI?

I'm on the same boat--I own the X-T5 and the X-T30ii. I find the 26mp sensor yields OOC JPEGs that have a better noise shape than the 40mp. The 40mp JPEG noise looks jagged whereas the 26mp looks more like film grain. I prefer the X-T5's handling and controls but the X-T30ii size makes it easy to toss in my work bag when sporting the Voigtlander pancakes.

Which Voigtlander pancakes do you use? Can you comment on them? I'm interested in pancakes.

I just recently opted to make a trade for an X-T30ii with some of my unneeded misc gears after considering the X-T50 for a quick minute. Even prior to the announcement I was looking at either getting an X-T30ii or X E-2S. I also have an X-T5 and prior to that I used an X-T2 (which is now fully converted for IR). Last month on a trip to Japan I got to handle an X-T30ii in a camera store and was amazed at how small it was and that sealed the deal for me.
X-T50 is great and I'm sure suits an eager market, I'm glad to see Fuji continuing to produce a variety of bodies and lenses. I like the Film Sim dial (I know its polarizing) but I don't feel its really necessary for me...would I use it if it were on one of my bodies, sure I would. Do I regret not having it, nope ...but since Fuji has drawn so many to their Film Sims (myself included) I think the dial will go over well with a decent market share of people. I really like that charcoal color, but still prefer the X-T30ii body design...and its smaller overall dimensions (few mm in each dimension) and lower weight (~60g lighter which is more than half the weight of my Voigtlander 18/2.8). The inclusion of IBIS will be welcome by a lot of people, but I don't really use these for video and I have used my X-T2 for several years and didn't really miss IBIS so I'll be fine without it.
I'm excited to using this smaller X-T30ii with my Voigtlander 18/2.8 Skopar and 27/2 Ultron which should make for a really small kit when I don't need to bring along my X-T5.
Anyways, there are so many options these days with Fujifilm and others that there is mostly something for everyone probably
One realizes how much of a bargain the old X-Tx0 line used to be--you get the same image quality and 80% of the specs for about 50% of the price. With the X-T50, you pay 80% the price for 80% of the specs. The is deliberate and represents a shift in Fujifilm's strategy. They are shifting to a "fewer units higher profit" margin model.

What this picture doesn't show is that the X-Tx0 bodies are taller, and with any lens attached (it's weird to compare with lens to no lens) it's going to be much thicker. So in the bag/pocket the X-T50 is going to take significantly more space.
The X-Tx0 line used to have a low resolution EVF fittingly for a $899 camera, it's a mistake to retain it for a $1399 camera.
For anyone who needs a 40 mp sensor and IBIS in a small body, the X-T50 will be attractive. But after seeing the list price, I’m even more satisfied with a recent purchase of a clean X-T30 for under $600.
