I'm not an expert on these gulls, but I think they are Black-headed gulls, here called Laughing Gulls, changing plumage. In summer they have a a black feathered head and in witner they alternate for white except a little dark spot near the ears. These days here we are going towards spring/summer season.
Yes, you are right, that small bird is a Common Redstart. Here it's called Colirrojo Real. But after looking for it through the web I lean to think he's an adult female instead of a juvenile male. Thank you very much for your clarification
