I can't for the life of me understand why it would sell for so much, and am questioning its value. Can anyone offer their insight?
Or would you agree it might be better to simply by the bundle, and sell the bag for a big discount, effectively reducing my cost for the camera and giving someone else a bargain bag?

If you've ever handled one of these bags you'd know they feel very well made of high quality materials, nicer and more sophisticated than your average Lowepro or generic camera bag. Value is in the eye of the beholder. I have a decade-old Thinktank bag that still looks and feels great despite a ton of use. My only issue with the Retrospective series is that the strap is not easily removed, as I prefer to use an aftermarket strap for higher comfort (Tom Bihn Absolute strap).

I have it and I love it.
It holds nicely a medium size system (I guess it is optimized around the FF DSLR systems, but I use it for a small Leica M system + for computer and photography accessories) + a 13" laptop and a tablet too. I find it a very efficient bag when travelling, it stores all I need even if it is quite small and light. As all Think Tank bags, there are a lot of nice small features, such as the foldable bottle support, convenient internal compartments, foldable rain cover, etc. It is also very comfortable to carry.
As said above Think Tank bags are well made and can be used many years. In fact I had an experience with their customer service, when I broke a buckle of a bag (my fault, I told them) and asked whether they sell replacement part; they just shipped a new part for free.
Therefore, I think the price is ok for what it is. Not cheap, but not shockingly high either.

I really like Think Tank products and have a few I use regularly. However I had a smaller version of this bag and while it was very well made I found it too heavy compared to their other offerings and that of the competition.
