Theoretically, as you said, you want use WA on M and long on Z. However, for most of my travel or landscape use, I don't really care use WA on Z or Tele on M, or vise versa. I found most of time, I do stop down anyway, and more than half of time, I don't even need focus but just use barrel for deep DOF images. I almost never shoot WA on Z wide open and 90% of time just use barrel focus. (with knowing how lens behave on body, I carefully evaluate each lens for stop down shooting).
For manual focus, I'd say I personally prefer rangefinder most of time, less stress on eyes and fast. For lens like 90mm, I generally don't have much problem focus, seldom I found I need perfect focus anyway, even if some percentage of images front focus slightly,(I try never back focus images) I don't think it really change anything for me. For real important ones, I can focus bracket. Sure I could use LV/EVF zoom for both M and Z. I never a big fan of shooting that way.
Z's AF is super reliable, as long as you don't select focus box too big to confuse the camera with background. Z with zoom is very practical and simply work but I have to say It doesn't have the same fun factor as using M.
For the case you described: shooting portrait with 90mm wide open, I would say I get about the same keeper rate either use Z7 EVF eye ball the focus or M rangefinder focus. (I can miss focus range from slightly to correct focus, with more time allowed, my keeper rate rising to almost 100% for both as well) I much prefer rangefinder focus though, much less stress on eyes and minds.
For important images like you do as pro, you might have to use 100% view to ensure getting the shot quickly. In that case, A AF lens is a better bet I think especially for MILC that you almost never fail to nail focus. It is much easy to deal under stress condition IMHO. For me, I just enjoy doing it slowly and rely on myself. That is the reason I didn't buy 105E till now even I think it is the best AF portrait lenses I have seen.
I compared 15VC with 14-30, I think 14-30 is actually a sharper lens, but shooting with real focus ring lens is so much more direct and reliable, I just hate to fiddle FBW, especially for hyper focal shooting. All the M wides have to stay. Z might come and go
