I was quite concerned about the lack of those knobs too. With the a9, it turns out I didn't change those settings very often. On the a7RIII, I have the Control wheel Left Button mode set to Drive Mode, C3 is Focus Mode, and C4 to Silent On-Off.
For me, I think this arrangement is faster for the Focus Mode knob, so I'm pleasantly surprised. Edited to note only seems faster than Focus mode knob. The Drive mode knob is super easy; the Left button (a7RIII) is pretty fast too.
Also, I'm learning to use the Function button to access and change the major settings quickly.

Don't map to C1 or C2 because you will need your finger for the shutter
I've only been using Sony for a few months. I've been setting the Eye AF to the lens "focus hold button." Holding the AEL or a different button is harder for me than the focus hold button.
Trust me, till now whenever i took the first few shots from a new lens, it was always a mixed feeling. I always took many shots and saw them at 100% and even then it used to be a case of me talking to myself and saying, looks sharp.
This one: i just took a shot and zoomed in to whatever percent and eyes wide open. The number plate of a car in the mid corner of the frame at ISO 12500...wow !!
Went out today for more shooting. After a more or less equal number of shots, the III is at 90% the II at 55%. Also, I am already trying to use the II as if it has the controls of the III, not a good thing when pushing to get a shot done. I am using the 24-70 Canon II on the III and the 70-200 on the II. For some reason right now, I am finding the IS of the Canon 70-200 F4 to work better than IBIS.

Found it! It works like that ONLY with single af. Gets eye with shutter release alone. Video describing it here:
I wish it was like that with continuous, still have to assign a button. I've gotten used to pressing a separate button so I guess no biggie. Prob decreases continuous focus if hunting for an eye processing wise so make sense.

Interesting but being on AFS mode can pose some issues if your subject is moving for sure. Kind of a half baked idea actually
