Does anyone know if I can use 8gb and 16 gb cards in a Nikon D2X?

Sure any camera supporting FAT32 will handle cards that size.

I use 8Gb and 16Gb cards daily with my D2x with no problems.

Also remember that it's generally best to format the cards in-camera.
