12 Gs is perfect. I like your config, the only thing I would recommend is to go with the P6T Deluxe V.2 instead of the V.1. The original mobo had some failure issues, so go for the V.2.
CPU is great. That's a huge heatsink, but it does a fine job. Where are you purchasing it?
I have the same Intel SSD and am very happy with it. I am using it as my boot drive and have some other mechanical disks for data. The benefit of an SSD for boot drive is that it makes applications load much faster and the general user experience feel much snappier.
I don't know what other hard disks you currently have or are planning to add to this setup. At this point I would only get the SSD if you plan on using it for a boot drive to install windows and all of your programs on. I would then be sure to use a good mechanical drive for files and data.

Plan on using the x25 for OS and apps only. Then using a 2 samsung f3 1TB drives for data and a file server for backup.
You can upgrade later, but I'd go with Blu-ray if I was building one. Yes, the drives and media are a bit more, but when I make slide shows for clients, I can now offer them video on bluray and some are starting to take advantage of that format (and yes, I charge a bit more for it).
The ssd might be a little small for OS AND programs... I'm using two Intel 160gb SSD's in a raid 0 array for OS and programs - so I get 320 gb appearing as as single drive. PS4 opens in 3 seconds flat. Very cool...
Also using two WD 1TB drives in a Raid 1 for data storage.
I went with a LG bluray drive, thinking I may want to back up data to 25 or 50 gb disks. Haven't done that yet, but it DOES play bluray disks well!

+1 for Blu-Ray, although I haven't burned any yet either. I'm using Delkin 100-Year Gold DVD's for a backup to my backup, they also make 100-Year Gold Blu-Rays, too. I bought the DVDs at B&H. Besides photo-editing, I enjoy watching movies and old TV shows on my computer, the SONY BR is excellent along with my nVidia card and Samsung 26" monitor. The transition from DVD to BR is much slower than the one from CD to DVD, but it is definitely happening.
Not sure you need to replace the heatsink that comes with the CPU.
I run a 920(2.66 GHz stock speed) with the OEM heatsink at 3.8 GHz with no issues. Was trying up to 4.2 GHz, but the cooler seem to not keep up at that speed so I shut down before I went up higher than I was comfy with, but it runs non-stop at 3.8 GHz.
So if you intend to run it at stock speed, you really don't need third party cpu fans

I'm very curious as to what your temps are with the stock cooler? My CPU is running at 4.02 GHz and I've got a Noctua heatsink, 4 X 12 cm. fans and 1 X 23 cm. top fan. The ambient temperature is pretty cool right now and the CPU is at 34 degrees, it will average a little higher in the summer. Under a full load of Prime95 it will get into the upper 60's and stay there. Have you run any benchmark programs on your computer and seen where the temps fall under a full load? Intel has a chart of maximum temps for each CPU, if i can locate it, I'll post it.
I've done an awful lot of reading on the overclockers' forums and the general consensus is if you're not keeping the temps in check, you'll undoubtedly shorten the life of the chip. And Intel stock coolers barely keep a CPU stable. It's one thing if you're just going to photo-edit a bit and not stress the system too much, but why take chances on losing a CPU when a tremendous heatsink upgrade can be bought for $50 to $75? If the OP is spending $1500 on a rig, a heatsink like the V8 is like buying insurance, IMHO.
I'm with Nicholas--please find a 3rd party cooler and install it to save your present $280 investment. The one I recommend above is rather inexpensive ($30) and merely a smidge behind the top of the line.
Seems like you need to look at the hard drive as stated above. I have multiple raid setups and would not think of any other way of implementing a system for speed and security. Remember that the fastest CPU and ram will practically come to a halt as soon as you start to write to scratch file.
Raid w striped drives for the scratch is the way to go and mirroring your data drive is so simple and secure it should be without question implemented. BTW I have the Antec 900+ and love how cool all my drives run in it.
