I like to have a minimum of 1/1250 or higher if I can, but the weather usually dictates what my shutter speed will be.
All of my images have the EXIF's intact. If you go to http://www.opanda.com and download their EXIF viewer and then install a plugin from them for your favourite web browser and you can just right click on any of my (or anyone else that leaves their EXIF's intact) images and view all of the EXIF data.
