Except for the 7D, this is my kit using the 17-40 and 70-200 4IS. I have the 30D to go with the 5DII. It all works well.
It doesn't have be all brand new, does it?

Why a crop body? Why a second body at all? Unless you are in the Himalayas you can walk into a shop in any city in the world and pick a new Canikony off the shelf. Beats carrying around a spare which can also be lost or damaged.
As freaklike me already said, 3 zooms and a prime would not be a dream system to me either. If you're going to carry 4 lenses, I'd make them all fast ones: 28mm, 50mm, 80mm, 135mm.

+1. Just, because primes are smaller and lighter than zooms, there would be room to carry one more lens, a good all-purpose zoom like 24-105L
So my suggestion is 1DsIII, Zeiss ZE 21, Zeiss ZE 50, Canon 135L, Canon 24-105L, Canon 1.4 TC.

That's not a "travel" kit. That's a 10kg kit for a photographer on a mission. Yes it is 10kg, add the weight of every piece, the extra batteries, the cards and the bag you are going to put them in. Then add the weight of the tourist book, the map and whatever else you might carry when out and about. And if I was travelling for pleasure and had 10kg of equipment on me, there would certainly be a lot of travelling but not much pleasure to be had.
My travel kit? One body, 28/50/85 (FX/35mm equivalent) and a P&S for when I don't want to lug the big one around. My opinion, works for me, doesn't have to work for anyone else!

I agree that these rules are insane because carrying that much gear is a pain. However, I'll have a go, size/weight savings being the main goal:
5D2 - $2700
500D - $650
17-40 - $750
28-75 - $410
70-300 DO - $1300
For the prime I would take an Oly or Ultron 40 f2 but the AF options, again bearing size/weight in mind, are 35 f2, 50 f1.4 or Sigmalux.
If I'm honest though, I would hate this kit because (a) zooms suck as componenets in a lightweight kit and (b) it really isn't necessary to take 3 large lenses, especially with the extra reach of the 500D. I would constantly resent the size and weight. My preferred option would be a 5D2 and 500D with one small wideangle prime and one small normal prime. That way you can travel really light and stitching and cropping can fill in the gaps. If you like taking boring telephoto pictures while travelling, you might add a small 85, 100, or 135 e.g. Contax 85 f2.8, Oly 90 f2, Contax 135 f2.8.
