I've already done it-from Pentax to Canon just this past summer. From personal experience, I can tell you it was a pain in the butt that I really don't want to do again, at least not for a long time to come, if ever. Selling and buying a bunch of gear within a few weeks time is exhausting!

My Canon kit is pretty much set once I buy a 1.4x TC and 430EXII flash.. At some point, I'd like to upgrade to FF from my 40D and possibly upgrade my macro from the Tamron 90 to the 100/2.8 IS, but that's a bit down the road.

I shot canon film bodies for 30 years, years ago I had the itch and had to buy a Nikon, so I bought one, I did not get comfortable with it, it felt awkward and things just weren't where i expected them, i felt uncoordinated with it so I sold it, when I bought my first digital, a 10D, it was because it was familiar, coming from a 1V & 1N, not much learning,(and at the time much cleaner files, not much difference today!) I think one would be much better off once they like a system to stay with it and use what he or she is already comfortable with, and I think there photography would benefit more from it. If one is any kind of photographer at all, Canon or Nikon either one will produce better results than the best photographer needs to satisfy anyone. I am a Canon lover and am bias, but if I had used a Nikon for 35 years instead of Canon I would feel the same way! I'll stick with what I got, besides I don't have 35 more years to aquire the glass and everything else that makes up our equipment list!
