Unless you're going to be living in a tent in a tropical rainforest, I really think you're worrying about nothing.
I live in Puerto Rico, and over the years, I've had the Rebel, 30D, 40D, and MKIII. NONE of my cameras have failed, and I don't baby them......... take them bike riding with me alot, and shoot a lot of surfing. After tens of thousands of shots on my RebelXT, I've since lent it to a friend, and it's still going strong.
A full time pro surf photog here, who does mostly water work, is still using a pair of, believe it or not ............20D's.
If you're going to be shooting in the rain, Aquatech makes a great storm jacket that will will work with your equipment for 100 bucks. If I'm going to be shooting in a downpour, I'd rather use the 40D in a storm jacket, than the MKIII without one .......... the storm jacket's going to be a whole lot more waterproof than any 1 series in a downpour. Not even the 1 series is waterproof. Weather "proof", yes, waterproof, no. You'll never see me standing in a downpour for an hour shooting my MKIII,,,,,,,,,, but any camera in an Aquatech storm jacket, is no problem at all.

I know 2 pro mountain bike photogs, both have 5d2's and their bodies are toast after 6 races, shooting in the dirt, foggy mist, some rain.
