While I find it true that on-site PRINTING is NOT required, onsite SELLING is.
I used to sell and print onsite - then went to only selling onsite. Sales stayed the same. More importantly, sales have increased with my ability to take more viewstations and no printing gear. Best of all, my profits went up with no printing staff to pay onsite. I print all my sales and mail them (free shipping to customer) cheaper than it would cost to have staff/gear onsite.
Yes, we get plenty of people who say they will go online - for which we happily oblige and hand them a card. We have image online the next day. We'll get less than 20% of our revenue from post-event, online sales compared to the onsite sales. Other companies that do what I do have done online only sales - their TOTAL sales comes out to about 20% of what we make.
So yes, people are comfortable with getting things later - but capturing the impulse purchase is key. If you don't have pix available, organized, easy to find - or not enough capacity to handle the crowds, then yes, they will walk. People's time is very important and valuable to them. A couple years ago, I read an article where Wal-Mart revamped their checkout process - both in-store and online - making it easier and faster to checkout because a recent survey valued a consumer's time at $90/hour.
