Ben, I use adapters for Olympus to EOS (Fotodiox Pro), M42 to EOS (I can't find the last store but I've used "ericccc1004" off of Ebay - another good supplier is something like HappypageHK or something similar) and Pentax K to EOS. Do a search under "XXX to EOS adapter" and you'll find lots of choices. I typically use a mid-priced adapter; not the cheapest or most expensive. You need an adapter that's machined to close tolerances and perfectly flat.
One decision you need to make is whether or not you want an adapter with "focus confirmation". In theory when you achieve focus the camera will let you know by lighting up the appropriate focus point in the viewfinder. It doesn't seem to help me, but others swear by it. One advantage of adapters with electronics is that some suppliers can code in the EXIF data so you'll know what lens you used (but not the f-stop as that's manual).
There are alot of deals out there for MF lenses if you'll spend the time looking. Many lenses available that simply have to Canon counterpart due to either pricing or lens characteristics. Olympus lenses are in great demand as none seem to have any issues with EOS cameras; their wide angle lenses especially well thought of. Carl Zeiss lenses have almost a cult following but I've avoided them to date as I'm afraid I'd like them too much!
You can have metering issues as mentioned above, but it's second nature for me to check to histogram and adjust as required. I've found specific lenses usually require about the same EC for most shots and I'll adjust as soon as I put the lens on my camera.
Good luck. As Cableaddict mentioned above there are many people that live for alternative glass. I bought my first MF lens a couple of years ago and now use these lenses for about 50% of my photos.
