Garnet I was born and raised in Portland and have lived on the Oregon coast and central Or as well so I always like to see Oregon landscapes.
I like the second photo best. The first seems dark as if the open sky influenced your meter reading excessively. The last one also has metering issues I think because its too light in the sky losing texture in the clouds.
I would advise paying a lot of attention to the histogram when shooting and shoot to the right.
These are good pics other than exposures. I don`t know how much of it can be fixed in post but i know its always best to nail the exposure in the field before proceeding.

Time of year makes killer images very tough. I really like the comps on 1 and 3, but agree with Bob, that the highlights are blown out. I think you can recover them in #3, but the first image might be too much. For 3, put up a curves layer, and use the eyedropper on the sky, and pull the curve down at that location on the diagonal line. You might need to increase contrast after that a bit.
