I didn't manage to finish (and probably won't for a while) some Epson Matte Black ink which expired Jan 2008. Is that the date it needs to be opened and stuck in the printer by, or when the ink needs to be on paper by? It's for the Epson 9800.
I've used expired ink in my lower end Epsons many times with nary a problem. Keep it sealed until ready to use and give it an extra shake or two before installing and you should be good to go.
The date codes from Epson indicate that the ink should be installed in the printer within two years of manufacture, in your case January 2008. Once installed, Epson recommends it be used within 6 months.
That being said, I've exceeded the recommended dates without incident. I spoke about this with an Epson rep at a photo show last October and he said that you don't need to pay too much attention to these dates. I suspect that you shouldn't exceed the dates by years but by months it shouldn't be a problem. Epson is being conservative, and of course, they won't be displeased if you miss the dates and buy more of their ink.
