When I look in >Profiles I see some profiles ie: (for my cin. display, etc.) but I also see other closed folders which I could open. Should I be seeing a folder for "printer profiles"?

No. You may well see a folder for a particular printer, and individual profiles within that folder. Apps which reference the Profiles folder "see past" the printer subfolders, so this allows you to organize your profiles by Printer subfolder. Think of it as a convenience rather than a restriction, and it's up to you whether you want to use that file-folder structure.
As for how many layers of folder superstructure are permitted, I don't know. You might well be able to have Profiles > Printers > Epson Printers > Epson 3800, and so on.
