p.2 #1 · Beginner trying to determine a structure...

You are pretty much free to setup your business however you want....
Take what we say with a grain of salt because a lot of us do it differently than others... there really is no right or wrong way to select and distribute shots as long as you have a good contract and everyone is on board.

For a wedding we typically deliver anywhere between 500 and 1000 photos depending on the coverage and length of the wedding. All of our photos are culled and then edited in LR. This year when we were really busy in the fall I outsourced my editing very successfully. Once you have the editor on board it is easy for them to pump out edits leaving you free to do other things. I can typically cull and edit a wedding in about 12 hours. Some can do it in half that time... even a quarter of that time. I like to take my time and take breaks, check FM, check other forums and FB and generally screw off when editing so it takes a while longer.

What does your "brand" call for? If you are just arbitrarily picking things to give clients etc. you are just going to be frustrated with your business after a while. What do YOU guys want to give couples? What type of experience, products, services, etc. Forget what they might want... if you set up a model that works for you guys then you will eventually have people come to you for that. Not everyone that comes your way is going to be someone you want to take. You might even turn someone a way.

Another question. Why do you want to shoot weddings? Is it just because people are asking you to do it? Or do you really love weddings?
The reason I ask is because weddings are a tough beast and unless you really want to do them I would say stay away. I know a lot of portrait and senior photographers who have shot a couple weddings for friends and literally wanted to kill themselves afterwards because it was a totally different ball game. We only do weddings. No headshots, no portraits, no babies, no seniors, no maternity... only weddings. The others just do not appeal to us.

you shouldn't give incomplete work. Charge more if that works but give edited pictures
