The compositions of the second and third are strongest, with my judgement leaning towards the second. Might benefit from bumping the mid-tone contrast to make the clouds snippier (USM 16, 60, 0) and dropping the vibrance and saturation somewhere between -10 and -20 each.

Karen, thanks for your comments.

I used the same formula in each shot.

Opening the raw image I set the Fill Light to 50, then I opened the image into CS5.
WB is Auto

From there I set:
Brightness -25
Contrast 75
Vibrance 5
Saturation 25

I'm not sure what you mean by dropping the vibrance and saturation somewhere between -10 and -20 each.

I've updated the second shot using levels and moving the mid tone slider to the right, does this look better?

Photoshop vibrance and saturation layer adjustment terminology. I used to dig highly saturated colors for most everything, but it can be a little like eating too much candy - too visually cloying, sometimes.
