The D700's shutter is obscenely loud. I attended a wedding where the photog was using a D700 and the noise at the ceremony was loud enough to be distracting.
D800 shutter sounds pleasant to my ears. My D700 was loud but OK. My former D300 had a even louder and very unpleasant sound...
I like the viewfinder of D800. I have no more a D700 to compare them but it seem to me that D800 viewfinder is larger and brighter than the one in D700. Or is just an result of the first day excitement .
The bad thing is that the beast sucks the battery at least twice faster than D7000... Or maybe I was overusing it in the first day...
All this new camera talk has me all hot and bothered. Leaving tomorrow for Zion NP, wishing I had something new in my hands! Alas I gotta wait for the D800E. I noticed a big diff between the the 1Ds, 5Dc, and 5D2, with the 1Ds emitting the most cultured sounds .

Do you know this by personal experience? How? Yes, the D700 sounds a bit "thin" to me. D90 is far nicer.
For you older folk, I'd like it to sound like that frog getting splattered in "Frogger" from many years ago. Now THAT was a sweet sound!
I just switched to a d700 last week, and i will agree...the shutter sounds very loud and brutal. The d90 i still have atm has a bit nicer sound, but for some reason...i like the sound of the d5000...and some canons...
Dang, talk about being pretty obsessive with our cameras! I should make the shutter sound of the d700 my alarm!
Interesting observation, sure to generate even more back and forths in the Canikon world. My personal favorite shutter sound is from a Nikon F3HP I had for awhile. Something about cloth shutters, though I don't think the F3HP had a particularly quiet shutter.

I hope you know I was kidding. Never really paid that much attention to various shutter sounds though most seem way too loud in a quiet setting.
The D700 is pretty loud & rude, that D800 clip sounds a little better. It's funny, I prefer the sound of the cheaper Nikon DSLR's like the D7000, much more subdued and without that extra 'ping'.
Haven't heard the 5DIII yet but my guess is that it's not as bad as the D800.
All those shutters mentioned are electric, except for the F2AS, which is all mechanical, baby. Back in the day the sound was described as a "pak". One of the pleasures of shooting Nikon F2's, plus the purely optical viewfinder. Anticipating what the Zeiss 55/1.4 looks like thru that finder.
Hard to compete with the Leica M's shutter sound though.
