I'm working toward something similar with my NEX-7 & bellows setup.
It's a bit clumsier, but I've been using the Horseman Viewcam adapter to shoot 100 year old Protars, Rapid Rectilinears, and even a Petzval Portrait lens for a while now. Very fun, and amazing how well those old lenses resolve. As long as you don't mind f/8.
I'm unfamiliar with the bellows systems you guys are using. Are there any tilt/shift that come in, or can be easily adapted to, LTM on the camera end? It seems that a shallow mount like LTM would have the best chance of allowing movements with something reasonably close to infinity focus with some lenses.

Bellows with movements are not cheap, nor common. Something like the "Spiratone Bellows Master SST" or "Nikon PB-4 Bellows" would be what you want.
Well, my bellows setup won't reach infinity with 50mm lenses, I'm too far out by 8-10mm, and that's with an M-NEX adapter 0.5mm away from the bellows.I'm thinking a 55+mm lens should work for infinity, as my 75mm lens has 15mm of extension @ infinity.

Not in, but attached to the front, have you ever placed another lens in front of another? they do it in macro a lot but the 2nd lens is typically reversed.I'm not sure this is what the owner has done or not, call it an educated guess.
