I have now photo'd six weddings this year as the paid photographer. I've been using the D5100, D7000, and D300. Mostly I've used the SB-900 but for a wedding last weekend I also had an SB-700 available. Some thoughts. The Sb-700 is a great compact flash for general purpose. It can do quite a bit at a wedding, but it just didn't have the power for everything. For regular wedding use I just would NOT want it as my only flash. For the formal shots I was using either two SB-28 fired by CyberSyncs (if wedding was distant and I took a plane,) or more ideally two White Lightning X3200 monolights. On none of the wedding I've done would a single SB-700 have enough power for formal shots. I look at it this way. Wedding photos are probably the most iimportant photos in most people's lives. I would be doing the a huge disservice if I went cheap and didn't bring correct equipment to do a decent job. If you aren't willing to do this, skip weddings. That said, my second shooter liked the SB-700 with a Lumiquest diffuser for shots of bride getting ready, bride at hair salon, and some close shots at the reception. It's not what I'd use as a main flash though. the problem is lack of power, especially with a mandatory diffuser on it.
