F-Stop, with heart-stopping prices and famously backordered availability, does. Their Tilopa BC, at least, opens from the back. Not sure about other models.
I have the LowePro 400 and it works great. I carry a Nikon 300mm 2.8, 85mm, 16-35mm, 24-70 2.8 inside the pack. On the outside compartment, I carry a SB900, SB600, 5 Nikon batteries 2 77mm filter stackers and 2 Pixel Knight flash remote receivers, with one Pixel Knight transmitter. I have also carried my tripod mounted on the pack when flying on planes without any problems. The camera is carried around my neck with a 70-300mm VR lens on it.
The Burton Zoom 28l and Fstop Satori are both great backpacks, depending on how much gear you need to carry.
Both are water resistant, I've take them to Antarctica, Svalbard, Galapagos, and Amazon rainforest. Being able to access the gear from the back is great, you can set the bag down in muck and not worry about getting it all over yourself when you put the backpack on.
Another plug for F-stop. I only have the Guru which is like school backback size but it does open from the back and can fit up to the medium pro ICU (I have both the medium and small depending how much I want to carry). Currently I have 7D, 100-400, 24-105, 100L with hoods and my Lee filter holder all in the mediumICU. Still tons of room for filters and batteries and memory cards and a laptop (I have both an ipad and 11inch Air in the laptop slot at the same time) and my Sony noise cancelling headphones, and my Kindle and etc., etc, And thats all just in the Guru, the Tilopia, Loka etc are another step up and can fit one of the large ICUs if you have even more gear. The Crumpler Karachi Outpost opens from the back. It's a fairly large backpack, with a strange pear shape. I didn't like mine, so I sold it a few years ago.
I should have been more speccific, I was wondering if there is a hiking backpack that opens from the back? I am looking for something close to the f-stop Loka but not as expensive, but if there isn't anything then I will just wait for a Loka. Thanks for all the suggestions but they aren't exactly what I am looking for.
Lowepro Photo Sport is a decent option for day hikes (opens on the side). Not really big enough for backpacking. If you want a larger bag you'll have to shell out the money for an F Stop bag.
I own a Loka, Tilopa BC, and a Satori EXP - all are great, and all open from the back - but I think most people would benefit from the Loka/Tilopa BC size - the Satori is pretty f'ing big and is not carryon approved for most airlines.
F-Stop Loka! Despite their inventory status my bag arrived very fast, too fast as it was suppose to be an xmas present...lolz
My only gripe with the Loka is I think it needs the zipper an inch or so in from the edge so you can actually zip the icu up. It is more than frustrating trying to zip it up especially for the price you pay. Otherwise, very comfy & nice bag.

@JJuLLiAAn - the Contrejour 35 has a fixed camera compartment. The Loka is more flexible in this respect. I was able to pick up a used Loka for a good deal with a medium ICU. I added a small ICU and this combination is a very flexible setup.
